The Midnight Gourmet

Heading to the Bengals game this weekend and looking for some great tailgating tips?

Sure, you can still partake in the staples - chips, burgers and dogs - but why not augment your tailgating experience with a few unique, tasty dishes from The Midnight Gourmet?

Nick Tolbert, a.k.a. The Midnight Gourmet, is back this season to provide his weekly recipes for Bengals fans. Check back prior to each Bengals game throughout the season for the latest dish.

THIS WEEK'S TASTY RECIPE (DECEMBER 2, 2007)
Chad's Catch of the Day
Grill Clams, Oysters and Mussels w/White Wine Sauce

1/2 butter
1/2 cup white wine
3 tablespoon minced garlic
1/2 cup diced tomatoes
Salt & Pepper to taste
1/4-cup heavy cream
18 littleneck clams (cleaned)
18 oysters (cleaned)
15 mussels (cleaned)
1 cup chopped fresh parsley
Juice of 2 lemons

1. Prepare a medium grill
2. Place medium-sized aluminum foil pan on one side of the grill, just barely over the fire.
3. Add to the pan, butter and garlic, cook garlic lightly.
4. Add white wine and reduce by half.
5. Add cream, let thicken, and sold dice tomatoes.
6. Meanwhile, place cleaned clams, oysters, and mussels on the grill.

Cook for 8 to 12 minutes until the shells open. (Discard any that does not open) As each clam, oysters, and mussel opens, place it in a serving dish. Pour the wine sauce and sprinkle with parsley and lemon juice.

ABOUT THE MIDNIGHT GOURMET

In recent years, Nick has been dedicated to teaching others the art of classical cooking. He has been a featured writer for several magazines and newspapers. In 1998, he launched "Denova" - a company that created a popular local cable television program called The Midnight Gourmet.
