Fried Peanuts "Jungle Style"
2-Cup shell raw peanuts, w/skins Peanut or vegetable oil as needed Salt to taste
In a narrow saucepan, place about 1-2 inches of oil. Turn the heat to medium-high. Heat the oil until it reaches 300 degrees. Add the peanuts’ and cook, stirring occasionally until they are golden brown, about 5 minutes. Remove the peanuts with a slotted spoon, drain on paper towels, and sprinkle with salt. |

ABOUT THE MIDNIGHT GOURMET
In recent years, Nick has been dedicated to teaching others the art of classical cooking. He has been a featured writer for several magazines and newspapers. In 1998, he launched "Denova" - a company that created a popular local cable television program called The Midnight Gourmet.
The show was nominated by Access Awards and featured in the Cincinnati Enquirer, the Business Courier, the Cincinnati Post, Herald Newspapers, as well as City Beat, and Everybody's News magazines.
